  • For the Meat
  • 1 ½ kg Lamb shoulder, chicken, or hamour fish (cut into large pieces)
  • 3 tablespoons Vegetable oil or ghee
  • 2 large Large onions, sliced
  • 4 cloves Garlic, minced
  • 3 pieces Tomatoes, diced
  • 2 tablespoons Tomato paste
  • 2 tablespoons Emirati baharat
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 3 pieces Dried black limes (loomi), pierced
  • 6 cups Water
  • For the Emirati Baharat
  • 2 tablespoons Ground cinnamon
  • 1 tablespoon Ground cardamom
  • 1 tablespoon Ground cumin
  • 1 tablespoon Ground coriander
  • 1 teaspoon Ground cloves
  • 1 teaspoon Ground nutmeg
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Ground ginger
  • For the Rice
  • 4 cups (soaked 30 mins) Basmati rice, rinsed and soaked
  • 6 cups Hot meat or fish stock
  • 2 tablespoons Ghee or butter
  • 1 teaspoon Ground cardamom
  • ½ teaspoon Ground cinnamon
  • ½ teaspoon (in 0.25 cup warm water) Saffron threads, soaked in warm water
  • 1 teaspoon Salt
  • For Garnish
  • ½ cup Fried onions
  • ½ cup Toasted almonds and cashews
  • ½ cup Raisins, soaked and plumped
  • Fresh cilantro, chopped

    Prepare the Baharat Blend

    Start by preparing your special Emirati baharat blend. Simply combine all the listed spices (ground cinnamon, cardamom, cumin, coriander, cloves, nutmeg, black pepper, and ginger) in a small bowl and mix them well. This aromatic blend is the heart of your Machboos, so make sure it's fresh and vibrant! You can store any extra in an airtight container for future use.

    Brown the Meat

    In a large, heavy-bottomed pot, heat the vegetable oil or ghee over medium-high heat. Once hot, carefully add the lamb, chicken, or fish pieces, ensuring not to overcrowd the pot. Brown the meat thoroughly on all sides until it develops a beautiful golden crust, which should take about 8 minutes. Remove the browned meat and set it aside.

    Sauté Aromatics and Tomatoes

    Using the same pot and residual oil, add the sliced onions. Sauté them over medium heat, stirring occasionally, until they turn deeply golden brown and caramelized, which should take around 10 minutes. This step is crucial for flavor development. Next, add the minced garlic and cook for just 1 minute until fragrant. Stir in the diced tomatoes and tomato paste, cooking for another 5 minutes until the tomatoes soften slightly.

    Infuse with Spices

    Now it's time to infuse the flavors! Add your prepared Emirati baharat, ground turmeric, salt, ground black pepper, and the pierced dried black limes (loomi) to the pot. Stir continuously for about 1 minute, allowing the spices to toast and release their wonderful aroma.

    Simmer the Meat

    Return the browned meat pieces to the pot. Pour in 6 cups of water. Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and let it simmer. Cook lamb for about 1.5 hours, chicken for 45 minutes, or fish for 20 minutes, until the meat is very tender and easily pulls apart. Carefully remove the cooked meat from the pot and set it aside. Strain the cooking liquid (stock) and reserve exactly 6 cups for the rice.

    Cook the Rice

    While the meat is resting, drain the soaked basmati rice. In a separate large pot, melt the ghee or butter over medium heat. Add the drained rice and stir gently for a couple of minutes to coat the grains with the ghee. Pour in the hot reserved stock, ground cardamom, ground cinnamon, saffron water, and salt. Bring the mixture to a rolling boil, then immediately reduce the heat to the lowest setting, cover the pot tightly, and let it simmer undisturbed for 20 minutes. This allows the rice to steam and become perfectly fluffy. Once cooked, turn off the heat and let the rice rest, still covered, for 10 minutes before serving.

    Assemble and Garnish

    To serve, artfully mound the fragrant Machboos rice onto a grand serving platter. Arrange the tender meat pieces over the top of the rice. Generously scatter the crispy fried onions, toasted almonds and cashews, plump raisins, and fresh chopped cilantro over the entire dish. It's ready to impress!

    Traditionally, Emirati Machboos is served communally on a large platter. Encourage guests to enjoy it with their right hand, forming small balls of rice and meat. It pairs wonderfully with Emirati pickles (torsha), fresh yogurt, and a crisp green salad on the side.
