  • 1 ½ cups Warm milk
  • 1 tablespoon Sugar
  • 1 teaspoon Active dry yeast
  • ½ teaspoon Salt
  • ½ teaspoon Ground cardamom
  • ¼ teaspoon Saffron threads
  • 2 tablespoons Vegetable oil or melted ghee

  • Cream cheese or local white cheese

    Activate Yeast & Soak Saffron

    First things first, let's get our yeast ready. In a small bowl, gently warm 1.5 cups of milk (make sure it's not too hot, just comfortably warm to the touch). Stir in the sugar and active dry yeast. Give it a quick mix and let it sit for about 10 minutes until it gets wonderfully frothy, indicating the yeast is alive and happy. In another tiny bowl, soak your saffron threads in 2 tablespoons of warm milk (from the total amount) to allow their beautiful color and aroma to infuse.

    Prepare the Batter

    While the yeast is blooming, grab a large mixing bowl. Whisk together the all-purpose flour, salt, and ground cardamom. Once your yeast mixture is bubbly, pour it into the dry ingredients. Add the eggs, the saffron-infused milk, and the vegetable oil (or melted ghee). Whisk everything together until you have a smooth, lump-free batter. It should be relatively thin, similar to a crêpe batter.

    Rest the Batter

    Cover your bowl with a clean kitchen towel or plastic wrap. Find a warm spot in your kitchen and let the batter rest and rise for about an hour. This crucial step allows the yeast to work its magic, developing flavor and giving the chabab its characteristic light, airy texture with small bubbles.

    Prepare for Cooking

    Once the batter has rested, it's time to cook! Heat a non-stick skillet or a flat griddle over medium heat. You want it hot enough to cook evenly but not so hot that it burns quickly. Lightly brush the surface with a little ghee or butter – just enough to prevent sticking and add a lovely aroma.

    Cook the Chabab Pancakes

    Pour about ¼ cup of batter onto the hot skillet. Gently swirl the pan or use the back of your ladle to spread the batter thinly into a round pancake, about 4-5 inches in diameter. Cook for 2 to 3 minutes on the first side, until you see small bubbles forming on the surface and the edges look set and slightly golden. Then, carefully flip it over and cook for another 1 to 2 minutes until the second side is also golden brown. Repeat with the remaining batter, lightly greasing the pan between each chabab if needed.

    As each chabab cooks, stack them neatly on a serving plate to keep them warm. These delicious Emirati pancakes are best enjoyed warm. Drizzle them generously with date syrup (dibs) or honey, and serve alongside some cream cheese or a traditional local white cheese for that perfect balance of sweet and savory.
