
Kuwaiti Tashreeb
Tashreeb is a cherished dish in Kuwait, especially popular during the holy month of Ramadan for Iftar meals, providing a comforting and nourishing start after a day of fasting.
Ingredients
- For the Broth
- 500 g lamb or chicken, cut into chunks
- 1 onion large onion, quartered
- 2 pieces dried limes (loomi), pierced
- 1 stick cinnamon stick
- 2 leaves bay leaves
- 1 teaspoon peppercorns
- 2 teaspoons salt
- 8 cups water
- For the Vegetables
- 2 carrots carrots, diced
- 2 potatoes potatoes, diced
- 1 can can chickpeas, drained
- For the Bread
- 4 pieces large pieces khubz bread, torn
- ¼ cup oil or ghee, for frying
- For Garnish
- 2 tablespoons ghee
- 1 teaspoon turmeric
- fresh cilantro

Start by browning your choice of lamb or chicken in a large pot. Add the quartered onion, pierced dried limes, cinnamon stick, bay leaves, peppercorns, and salt. Pour in the water, bring it to a boil, then reduce the heat and let it simmer gently for about 90 minutes, or until the meat is wonderfully tender. Carefully strain the flavorful broth and set aside the tender meat.

Return the strained broth to the pot. Add the diced carrots, potatoes, and the drained chickpeas. Bring to a simmer again and cook for another 20 minutes, or until the vegetables are tender but still hold their shape.

While the vegetables cook, heat the oil or ghee in a separate pan. Fry the torn khubz bread pieces until they turn golden brown and delightfully crispy. Remove them from the pan and drain any excess oil on paper towels.

Arrange the crispy fried bread pieces in the bottom of a large serving dish. Gently layer the tender meat and cooked vegetables over the bread. Then, generously ladle the hot, rich broth over everything, ensuring the bread is well-soaked.

For a fragrant finish, melt the ghee in a small pan with the turmeric until it becomes aromatic. Drizzle this golden spiced ghee over the assembled tashreeb. Finally, sprinkle fresh cilantro generously over the top for a burst of color and flavor.
