  • 500 g Lamb or chicken chunks
  • 1 teaspoon Allspice
  • ½ teaspoon Cardamom
  • ½ teaspoon Cinnamon
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoons Oil
  • For the Vegetables
  • 2 medium Eggplants, sliced
  • 2 medium Potatoes, sliced
  • 2 medium Tomatoes, sliced

  • 2 ½ cups Medium-grain rice, rinsed and soaked 20 minutes
  • 3 ½ cups Hot stock (from meat or vegetable)
  • 1 teaspoon Allspice
  • ½ teaspoon Turmeric
  • 1 teaspoon Salt
  • 2 tablespoons Tomato paste
  • ¼ cup Oil
  • For Garnish
  • ½ cup Toasted nuts
  • 2 tablespoons Fresh parsley, chopped

    Begin by seasoning your lamb or chicken chunks generously with 1 teaspoon of allspice, 1 teaspoon of salt, and ½ teaspoon of black pepper. In a large, heavy-bottomed pot or Dutch oven, heat the 2 tablespoons of oil over medium-high heat. Add the seasoned meat and sear it on all sides until it develops a beautiful golden-brown crust. Pour enough water to just cover the meat, bring it to a boil, then reduce the heat to low. Cover the pot tightly and let it simmer for about 45 minutes, or until the meat is fork-tender. Once cooked, remove the meat and set it aside, making sure to reserve the flavorful cooking stock for the rice.

    While the meat is simmering, prepare your vegetables. Heat oil for frying in a deep pan over medium-high heat. Carefully fry the sliced eggplant until golden brown and tender, then transfer them to a plate lined with paper towels to drain excess oil. Repeat the process with the sliced potatoes, frying them until they are golden and slightly crisp. Set all fried vegetables aside.

    Thoroughly drain the soaked medium-grain rice. In a large bowl, combine the drained rice with 1 teaspoon of allspice, ½ teaspoon of turmeric, 1 teaspoon of salt, the 2 tablespoons of tomato paste, and ¼ cup of oil. Mix everything gently with your hands or a spoon until the rice grains are evenly coated with the spices and paste, ensuring a vibrant color and rich flavor throughout.

    Now, it's time to assemble your beautiful Maqluba! In the same large, heavy-bottomed pot (or a clean one if preferred), arrange the sliced tomatoes in a single layer at the very bottom. This acts as a protective base and infuses the dish with flavor. Next, layer half of the fried eggplant slices, followed by half of the fried potato slices. Distribute the cooked lamb or chicken chunks evenly over this layer. Then, add the remaining eggplant and potato slices on top of the meat. Finally, carefully spread the seasoned rice evenly over all the layers, pressing it down gently. Slowly pour the hot reserved stock over the rice, ensuring it just covers the rice layer by about 1-2 cm.

    Place the pot on high heat and bring the liquid to a rolling boil. Once it starts boiling vigorously, immediately reduce the heat to the lowest setting possible. Cover the pot tightly with its lid, ensuring no steam escapes, and let it simmer undisturbed for 30 to 35 minutes. It's crucial not to lift the lid during this time, allowing the rice to steam perfectly and the flavors to meld.

    Once the cooking time is complete, turn off the heat but keep the pot covered. Let the Maqluba rest for a minimum of 15 minutes. This crucial resting period allows the layers to settle and solidify, making it easier to invert without crumbling. After resting, carefully place a large, flat serving platter upside down over the pot. Using oven mitts for safety, grip both the pot and the platter firmly. With a swift and confident motion, invert the entire pot onto the platter. Tap the bottom of the pot gently a few times, then carefully lift the pot to reveal your stunning, perfectly layered Maqluba.
