Kuwaiti Machboos: A Culinary Journey of Flavor

Ingredients

- 1 ½ kg Lamb shoulder, chicken, or Zubaidi fish, cut into large pieces
- 3 tablespoons Vegetable oil or ghee
- 2 Large onions, sliced
- 4 cloves Garlic, minced
- 3 Tomatoes, diced
- 2 tablespoons Tomato paste
- 2 tablespoons Kuwaiti spice blend (from list below)
- 1 teaspoon Ground turmeric
- 1 teaspoon Salt
- 1 teaspoon Ground black pepper
- 3 Dried black limes (loomi), pierced
- 6 cups Water
- For the Kuwaiti Spice Blend
- 2 tablespoons Ground cinnamon
- 1 tablespoon Ground cardamom
- 1 tablespoon Ground cumin
- 1 tablespoon Ground coriander
- 1 teaspoon Ground cloves
- 1 teaspoon Ground nutmeg
- 1 teaspoon Ground black pepper
- 1 teaspoon Ground ginger
- ½ teaspoon Ground saffron
- For the Rice
- 4 cups Basmati rice, rinsed and soaked for 30 minutes
- 6 cups Hot meat or fish stock
- 2 tablespoons Ghee or butter
- 1 teaspoon Ground cardamom
- ½ teaspoon Ground cinnamon
- ½ teaspoon Saffron threads, soaked in ¼ cup warm water
- 1 teaspoon Salt
- For Garnish
- ½ cup Fried onions
- ½ cup Toasted almonds and cashews
- ½ cup Raisins, soaked and plumped
- Fresh cilantro, chopped

Prepare the Kuwaiti Spice Blend
Begin by combining all the ingredients listed under 'For the Kuwaiti Spice Blend' in a small bowl. Mix them thoroughly to ensure an even distribution of flavors. This aromatic blend is the heart of your Machboos!

Brown the Meat
8 minHeat the vegetable oil or ghee in a large, heavy-bottomed pot over medium-high heat. Add your chosen meat (lamb, chicken, or Zubaidi fish pieces) and brown it on all sides until it develops a rich golden crust. This step seals in the juices and builds flavor. Once browned, remove the meat from the pot and set it aside.

Sauté Aromatics
16 minIn the same pot, add the sliced onions and sauté them over medium heat, stirring occasionally, until they turn deeply golden and caramelized, which should take about 10 minutes. Then, add the minced garlic and cook for another minute until fragrant. Stir in the diced tomatoes and tomato paste, cooking for 5 minutes until the tomatoes soften slightly and the paste darkens.

Build the Flavor Base
1 minNow, add your prepared Kuwaiti spice blend, ground turmeric, salt, black pepper, and the pierced dried black limes (loomi) to the pot. Stir well for about a minute, allowing the spices to toast and release their incredible aroma. This is where the magic of Machboos truly begins!

Simmer the Meat
Return the browned meat to the pot. Pour in 6 cups of water and bring the mixture to a boil. Skim off any foam that rises to the surface. Reduce the heat to low, cover the pot, and let it simmer until the meat is wonderfully tender. Cooking times will vary: lamb will need about 1.5 hours, chicken about 45 minutes, and fish around 20 minutes. Once cooked, carefully remove the meat and strain the stock, reserving 6 cups for the rice.

Cook the Aromatic Rice
20 minDrain the soaked basmati rice thoroughly. In a separate pot, melt the ghee or butter over medium heat. Add the drained rice and stir gently for a couple of minutes to coat the grains. Pour in the hot meat/fish stock, ground cardamom, ground cinnamon, the saffron water, and salt. Bring to a rolling boil, then immediately reduce the heat to very low, cover tightly, and let it simmer for 20 minutes until all the liquid is absorbed and the rice is fluffy.

Assemble and Garnish
Once the rice is cooked, let it rest, covered, for 10 minutes. Then, gently fluff it with a fork. Mound the fragrant rice onto a large serving platter. Arrange the tender cooked meat pieces elegantly on top of the rice. Finally, generously scatter the fried onions, toasted almonds and cashews, plumped raisins, and fresh chopped cilantro over the entire dish. This adds beautiful color, texture, and a burst of flavor.
