Kuwaiti Biryani
Kuwaiti Biryani is a cherished dish, reflecting the country's historical ties with India. It's often reserved for special gatherings and family lunches, especially on Fridays.
Ingredients
- For the Meat
- 1 kg Lamb or chicken, cut into chunks
- 2 onions Onions, sliced
- 3 tablespoons Oil
- 1 teaspoon Cardamom
- 1 teaspoon Cinnamon
- ½ teaspoon Black pepper
- 1 teaspoon Salt
- 2 pieces Dried limes (loomi), pierced
- 2 cups Water
- For the Rice
- 4 cups Basmati rice
- 6 cups Water or stock
- 2 tablespoons Ghee
- 1 teaspoon Cardamom
- 1 teaspoon Salt
- ½ teaspoon Saffron, soaked in ¼ cup warm milk
- For the Layers
- 3 potatoes Potatoes, sliced
- 2 onions Onions, fried until crispy
- ½ cup Raisins
- ½ cup Toasted almonds
- 4 eggs Hard-boiled eggs, halved

Prepare the Meat
Begin by heating the oil in a large pot. Add the sliced onions and sauté them gently until they turn golden and fragrant. Introduce the lamb or chicken chunks, along with cardamom, cinnamon, black pepper, salt, and the pierced dried limes. Stir well to coat the meat with the spices. Pour in the water, bring to a simmer, then cover the pot and let it cook on medium-low heat until the meat is wonderfully tender. Once cooked, separate the meat from the broth and set both aside.

Fry the Potatoes
While the meat cooks, prepare your potatoes. Heat some oil in a separate pan and fry the potato slices until they are beautifully golden brown and slightly crisp. Remove them from the pan and drain any excess oil on paper towels.

Par-cook the Basmati Rice
5 minDrain the soaked basmati rice thoroughly. In a large pot, bring the 6 cups of water or stock to a rolling boil. Add the ghee and salt, then carefully add the drained rice. Boil the rice for exactly 5 minutes; it should be partially cooked, still firm to the bite, but not fully soft. Drain the rice immediately.

Assemble the Biryani Layers
In a heavy-bottomed pot, spread half of the par-cooked rice evenly at the bottom. Arrange the cooked meat over the rice, followed by the fried potatoes, crispy fried onions, raisins, and toasted almonds. Cover these delicious layers with the remaining half of the par-cooked rice. Finally, drizzle the saffron-infused milk over the top layer of rice.

Steam to Perfection
30 minCover the pot tightly with a lid, ensuring it's well-sealed to trap the steam. You can use aluminum foil under the lid for a better seal. Place the pot over very low heat and let the biryani steam for about 30 minutes. This gentle steaming allows the flavors to meld beautifully and the rice to cook through perfectly.

Serve Your Kuwaiti Biryani
Once done, let the biryani rest for 5-10 minutes off the heat, keeping it covered. Then, carefully invert the pot onto a large serving platter, allowing the layered rice and meat to cascade out. Garnish generously with the halved hard-boiled eggs. Serve immediately with a side of yogurt salad or pickles.
