This sweet porridge is a beloved Emirati dessert, often prepared for special occasions like Eid celebrations, weddings, and to welcome new mothers. It embodies the generous spirit of Emirati hospitality.

  • 2 cups whole wheat flour
  • 3 cups water
  • ½ cup date syrup
  • 4 tablespoons ghee or clarified butter
  • ½ teaspoon ground cardamom

    Start by bringing the water to a vigorous boil in a medium-sized pot. Once boiling, gradually add the whole wheat flour, stirring continuously and vigorously with a wooden spoon to prevent any lumps from forming. Keep stirring until you have a thick, smooth porridge-like consistency.

    Now, stir in the rich date syrup, melted ghee, fragrant ground cardamom, and a pinch of salt. Continue cooking the mixture over medium heat, stirring constantly for about 5 to 7 minutes. You'll know it's ready when the asida becomes very thick, develops a beautiful glossy sheen, and starts to pull away cleanly from the sides of the pot.

    To shape your asida, lightly moisten the inside of a medium-sized serving bowl with a little water – this helps prevent sticking. Carefully spoon the hot asida into the bowl, pressing it down gently and smoothing the top. Then, invert the bowl onto your chosen serving platter, creating a neat dome shape.

    Using the back of a spoon, gently create a small, deep well in the center of the asida mound. Generously pour the extra melted ghee into this well. Finish by drizzling more date syrup over the entire dish, and then sprinkle with toasted sesame seeds and a touch of ground cinnamon for a final flourish.

    Serve the Emirati Asida warm. Traditionally, it’s enjoyed by scooping small portions with your fingers, ensuring each bite collects some of the rich ghee and sweet date syrup from the well.
