Egyptian Stuffed Pigeons
Hamam Mahshi is a celebrated delicacy in Egyptian cuisine, often served at special occasions like weddings or to honor guests. It's traditionally made with local baladi pigeons and cooked until crispy, embodying the rich culinary heritage of Egypt.
Ingredients
- For the Pigeons
- 4 Whole squabs or small pigeons, cleaned
- 2 tablespoons Vegetable oil
- 1 teaspoon Salt
- ½ teaspoon Ground black pepper
- ½ teaspoon Ground cinnamon
- For the Stuffing
- 1 cup Short-grain rice or freekeh, rinsed
- 2 tablespoons Vegetable oil
- 1 Small onion, diced
- 2 tablespoons Pine nuts
- 2 tablespoons Raisins
- 1 teaspoon Ground allspice
- ½ teaspoon Ground cinnamon
- ½ teaspoon Ground black pepper
- 1 teaspoon Salt
- 1 cup Chicken stock
- Pigeon livers and giblets, chopped (from the pigeons)
- For the Marinade
- 2 tablespoons Vegetable oil
- 1 tablespoon Fresh lemon juice
- 1 teaspoon Ground cumin
- ½ teaspoon Ground black pepper
- ½ teaspoon Salt

Carefully clean the pigeons, making sure to remove any remaining innards and pat them thoroughly dry, inside and out. Set aside the chopped livers and giblets for the stuffing. Season the cleaned pigeons lightly with salt, pepper, and cinnamon.

In a medium saucepan, heat 2 tablespoons of vegetable oil. Sauté the diced onion until it turns golden. Add the chopped pigeon livers and giblets, cooking for about 2 minutes until they start to brown.

Stir in the rinsed rice or freekeh, pine nuts, raisins, allspice, cinnamon, black pepper, and salt. Pour in the chicken stock, bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 15 minutes until the rice/freekeh is partially cooked. Remove from heat and allow it to cool slightly.

Once the stuffing has cooled, carefully fill the cavity of each pigeon with the mixture. Be sure not to overfill, as the rice/freekeh will expand during cooking. Close the opening of each pigeon by either sewing it shut with kitchen twine or securing it with small skewers to keep the stuffing inside.

Prepare the marinade by whisking together the 2 tablespoons of vegetable oil, fresh lemon juice, ground cumin, black pepper, and salt in a small bowl. Rub this marinade generously over the entire surface of each stuffed pigeon. Let the pigeons marinate for at least 30 minutes to absorb the flavors.

You have two wonderful cooking options: For grilling, preheat your charcoal grill to medium heat. Grill the pigeons for 20-25 minutes, turning them frequently, until the skin is beautifully crispy and golden, and the meat is cooked through. Alternatively, you can roast them in a preheated oven at 200°C (400°F) for 30-35 minutes, or until golden and tender.

Once cooked, allow the stuffed pigeons to rest for a few minutes before serving. This helps the juices redistribute, ensuring a more tender and flavorful dish. Serve them hot, traditionally with the stuffing exposed, alongside rice, fresh bread, and a crisp salad for a truly authentic Egyptian meal.
