Classic Lebanese Hummus with Tahini
Hummus is a beloved staple of Lebanese mezze, frequently enjoyed as part of a vibrant spread of small dishes.
Ingredients
- 2 cups (or 3 cans, 15 oz/425g each, drained) Dried chickpeas
- ½ cup Tahini (sesame paste), well-stirred
- ¼ cup Fresh lemon juice
- 2 cloves Garlic, minced
- ½ teaspoon Salt
- ¼ teaspoon Ground cumin
- ¼ cup Ice water
- 4 tablespoons Extra virgin olive oil (for blending and serving)
- For Garnish
- Whole cooked chickpeas
- Sweet paprika or sumac
- Fresh parsley, chopped
- Toasted pine nuts

Soak the Chickpeas
Begin by rinsing your dried chickpeas thoroughly. Place them in a large bowl, cover with plenty of fresh water (they will expand significantly), and let them soak overnight for 8 to 12 hours.

Cook Until Tender
1.5 hrDrain and rinse the soaked chickpeas. Transfer them to a large pot, cover generously with fresh water, and bring to a rolling boil. Reduce the heat to a gentle simmer, skimming off any foam that rises to the surface. Continue cooking for about 90 minutes, or until the chickpeas are extremely tender and almost falling apart. Reserve about a cup of the cooking liquid before draining.

Peel for Silkiness (Optional but Recommended)
For that signature silky-smooth Lebanese texture, gently rub the warm chickpeas between your hands in a bowl of water. The skins will loosen and float to the surface; simply skim them off and discard. This step requires a little patience but makes a big difference.

Blend the Hummus Base
3 minIn a food processor, combine the warm, peeled chickpeas with the tahini, fresh lemon juice, minced garlic, salt, and cumin. Add 2 tablespoons of extra virgin olive oil. Process for at least 3 minutes, scraping down the sides as needed, until the mixture is very smooth and creamy. Don't rush this step!

Achieve Perfect Fluffiness with Ice Water
With the food processor still running, slowly drizzle in the ice water, a tablespoon at a time. The cold water helps emulsify the tahini and lightens the texture, making your hummus wonderfully fluffy and airy. Add just enough to reach your desired velvety consistency.

Taste and Adjust
Now is the time to taste your hummus and fine-tune the flavors. Add more salt, lemon juice, or even a touch of reserved chickpea cooking liquid if you prefer a thinner consistency. It should be tangy, nutty, and perfectly seasoned.

Plate with a Flourish
Spoon the hummus onto a shallow serving plate or bowl. Use the back of a spoon to create a beautiful swirling pattern, making a slight well in the center for the garnishes.

Garnish Generously
Drizzle a generous amount of extra virgin olive oil into the well. Sprinkle with whole cooked chickpeas, a dusting of sweet paprika or sumac, and freshly chopped parsley. If you like, add a scattering of toasted pine nuts for extra texture and flavor.
