  • For the Meat
  • 1 kg Chicken thighs or lamb chunks
  • 2 units Onions, sliced
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Ground cardamom
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 2 units Dried limes (loomi), pierced
  • 2 cups Water
  • For the Rice
  • 4 cups Basmati rice, rinsed and soaked
  • 6 cups Water or stock
  • 2 tablespoons Vegetable oil or ghee
  • 1 teaspoon Ground cardamom
  • 1 teaspoon Salt
  • ½ teaspoon (in 0.25 cup milk) Saffron threads, soaked in warm milk
  • For the Layers
  • 3 units Large potatoes, peeled and sliced into rounds
  • Vegetable oil, for frying
  • 2 units Onions, thinly sliced and fried until crispy
  • ½ cup Raisins
  • ½ cup Toasted almonds
  • 4 units Hard-boiled eggs, peeled and halved
  • For the Spice Mix (Baharat)
  • 1 tablespoon Ground allspice
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground cardamom
  • ½ teaspoon Ground nutmeg
  • ½ teaspoon Ground black pepper
  • ¼ teaspoon Ground cloves

Method

    Prepare the Meat

    Let's get the meat cooking! In a large pot, warm the vegetable oil over medium heat. Add the sliced onions and sauté them gently until they turn soft and golden brown, about 7-10 minutes. Now, add your chicken thighs or lamb chunks and brown them lightly on all sides. Stir in the ground cardamom, cinnamon, black pepper, and salt. Add the pierced dried limes and pour in the water. Bring the mixture to a simmer, then reduce the heat to low, cover the pot, and let it cook until the meat is wonderfully tender. This will take about 45 minutes for chicken or 1.5 hours for lamb. Once done, remove the meat and set it aside, reserving the flavorful cooking liquid.

    Fry the Potatoes

    While the meat is simmering, prepare your potatoes. Heat a good amount of vegetable oil in a separate pan over medium-high heat. Fry the potato rounds in batches until they are beautifully golden brown and tender. Make sure to drain them well on paper towels to remove excess oil.

    Par-cook the Rice

    Now for the fragrant basmati! Drain your soaked rice thoroughly. In a large pot, bring the 6 cups of water or stock to a rolling boil with the 2 tablespoons of oil/ghee and 1 teaspoon of salt. Add the drained rice and let it boil vigorously for exactly 5 minutes – we want it par-cooked, not fully done. Drain the rice immediately through a fine-mesh sieve.

    Layer the Biryani

    It’s time to assemble our masterpiece! In a large, heavy-bottomed pot (the same one you cooked the meat in, if you prefer, or a clean one), spread half of the par-cooked rice evenly at the bottom. Sprinkle a generous amount of your Baharat spice mix over this rice layer. Arrange the cooked meat, fried potatoes, crispy fried onions, raisins, and toasted almonds over the spices. Cover this delicious layer with the remaining par-cooked rice. Finally, drizzle the saffron-infused milk evenly over the top layer of rice.

    Steam (Dum Cooking)

    To infuse all the flavors, cover the pot tightly. You can use foil under the lid for a perfect seal. Place the pot over very low heat and let it steam gently for 30 minutes. This 'dum' cooking method allows the rice to fully cook in the aromatic steam, absorbing all the wonderful flavors.

    Serve and Enjoy

    Once the biryani is cooked, turn off the heat and let it rest, still covered, for about 10 minutes. This step is crucial for the grains to firm up and for the flavors to settle. Carefully fluff the rice and meat mixture with a fork. You can then gently invert the biryani onto a large serving platter if you wish, or simply spoon it out. Garnish generously with the halved hard-boiled eggs. Serve your magnificent Iraqi Biryani warm, perhaps with a side of yogurt salad!
